In the late 1800s, Symphorien Chevillon began Domaine Chevillon with 30 acres of land in the coveted Nuit St. Georges, selling fruit to Burgundy negociants. Post World War I, his son, Eugene-Francois, returned home and tended to the vines. He purchased a few Premier Cru plots before unexpectedly passing away, leaving the reins to his son, Maurice, while his brothers took their share of the estate and began new ventures.
It was then, in 1946, when Robert Chevillon took over, becoming the first of the family to bottle the wines rather than selling the fruit. As such, the estate was named after him and quickly grew from a mere 3 hectares to the current-day 14-hectare holding. Robert dragged the estate from a middling Burgundy producer to one of the region's most notorious estates, eventually retiring in 2003 and leaving the winemaking responsibilities to his two sons, Denis and Robert. The pair has done an impeccable job honoring their father's hard-earned legacy, regularly producing wines lauded by publications such as The Wine Advocate, who called Domaine Chevillon "one of [their] favorite addresses in all of Burgundy."
Domaine Chevillon Strict Winemaking
As Robert Chevillon carefully purchased some of Burgundy's greatest terroirs, it is only fitting that the winemaking is equally as strict. Denis and Bertrand opt to carry on most of their father's traditions while staying updated with modern technology and techniques. The fruit is always debudded early in the spring, and each vine is meticulously checked twice a week to ensure the precise harvest date. However, the team does control the harvest date with a "green harvest" in July, removing extra grape bunches from the vines.
Once ready, the grapes are hand-picked and sorted. destemmed, then placed in vats for 5 to 6 days. After fermentation, the wine is aged in 30% new French oak barrels for 15-18 months before making its way to public release. Thanks to 50+ year-old vines, Chevillon pinot noir contains a distinct elegance, finesse, and complexity that is adored by Burgundy lovers across the globe.
