The 2000 Chevy is a complete wine with mind boggling purity and a brilliantly long finish that seems to be crafted from liquified rock. In terms of its drinkability, this is rapidly approaching its apogee though it would not be unwarranted to allow it another 2 to 3 years of cellar time first. In sum, this is a real stunner that should provide another 20 years of enjoyment. Multiple and consistent notes.
